🌿 Soft and Tangy Buttermilk Upma

Main Ingredients:

  • 1 cup semolina (thick variety, roasted)
  • 2 finely chopped onions 🧅
  • 10–12 garlic cloves (optional) 🧄
  • 1-inch grated ginger
  • 3–4 green chillies, chopped (or red chillies)
  • 1 small bowl chopped coriander
  • 5–6 curry leaves (or curry leaf powder)
  • 2 cups buttermilk 🥛
  • 5 cups water + 1 cup extra if needed 🚰
  • Salt to taste


For Tempering:

  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 tbsp oil or ghee (adjust as per preference)

👩‍🍳 Method:

  1. Heat oil in a pan. Add mustard seeds and let them splutter, then add cumin seeds.
  2. Add garlic and sauté lightly.
  3. Add chopped onions and chillies. Sprinkle some salt to help onions cook faster.
  4. Once partially cooked, add curry leaf powder and sauté.
  5. Add grated ginger and coriander. Sauté briefly and cover with a lid to steam for 30 seconds.
  6. Pour 5 cups water and salt. Mix and bring to a boil.
  7. Add buttermilk, stir, and bring to a second boil.
  8. Add remaining coriander.
  9. Gradually add roasted semolina, stirring continuously to avoid lumps.
  10. Keep stirring until the mixture thickens and water is absorbed.
  11. Cover and let steam for 1–2 minutes.
  12. Check consistency, stir again, and add the extra cup of water if necessary.

🍽️ Serving Tips:

  • Serve hot with a garnish of coriander or grated coconut.
