🌼 Aromatic Traditional Puran Poli Recipe (For Food Lovers)
🫓 Ingredients:
🔸 For the Filling (Puran):
- Chana dal – 1 cup (soaked overnight and pressure-cooked)
- Jaggery – 1 cup (chopped)
- Nutmeg powder – ¼ tsp
- Cardamom powder – ½ tsp
- Ghee – 1 tbsp
- Salt – a pinch

🔸 For the Outer Dough (Poli):
- Wheat flour – 1½ cups
- Plain flour (maida) – ½ cup (optional, for softness)
- Turmeric powder – ¼ tsp
- Oil / Ghee – 2 tbsp
- Water – as required (to knead soft dough)
🍲 Method:
1️⃣ Preparing the Filling (Puran):
- Cook the soaked chana dal in a pressure cooker (2 whistles).
- Drain and cool it completely. Save the drained water (can be used for 'Katachi Amti').
- Grind the dal and jaggery together coarsely in a mixer.
- Transfer the mixture to a heavy-bottomed pan and cook on a low flame.
- Once the mix thickens, add nutmeg powder, cardamom powder, salt, and ghee.
- Mix thoroughly and allow it to cool down.
2️⃣ Kneading the Dough:
- Combine wheat flour, maida, turmeric, salt and oil/ghee and knead into a soft dough using water as needed.
- Cover and let it rest for 30 minutes.
3️⃣ Rolling and Roasting:
- Make equal portions of the dough and the puran (filling).
- Roll a dough ball lightly, place the puran in the centre and seal it like a dumpling.
- Gently roll it into a flat round shape.
- Roast on a hot griddle with ghee until golden and crisp on both sides.
🧈 Serving Suggestion:
- Top the hot Puran Poli with a dollop of ghee.
- Serve with Katachi Amti (dal water curry) or warm milk.

Grind only when the cooked dal has completely cooled, otherwise the jaggery mixture becomes watery.
