✅ Ingredients
For Outer Sabudana Mixture:
  • Sabudana (Sago) – 1 cup
  • Boiled Potatoes – 2 medium-sized
  • Roasted Peanut Powder – ¼ cup
  • Green Chillies – 1 to 2, finely chopped
  • Fresh Coriander – 2 tbsp, chopped
  • Cumin Seeds – ½ tsp
  • Lemon Juice – 1 tbsp
  • Salt – to taste
For Stuffing:
  • Boiled Potato – 1 large
  • Crumbled Paneer – 2 tbsp
  • Red Chilli Powder – ½ tsp
  • Garam Masala – ¼ tsp (If it is not for fasting, add garam masala.)
  • Fresh Coriander – 1 tbsp
  • Salt – to taste
For Frying:
  • Oil – for deep frying

✅ Method
1️⃣ Soak the Sabudana:
Rinse sabudana well and soak for 4–5 hours or overnight. Drain completely and fluff with a fork.

2️⃣ Prepare the Outer Mixture:
Mash boiled potatoes in a bowl. Add soaked sabudana, peanut powder, green chillies, cumin, salt, lemon juice, and coriander. Mix into a soft dough.

3️⃣ Make the Stuffing:
Mash boiled potato separately. Mix in grated paneer, red chilli powder, garam masala, (If it is not for fasting, add garam masala.) coriander and salt.

4️⃣ Shape and Fill:
Take lemon-sized portions of sabudana dough, flatten in your palm, place stuffing inside, and shape into a ball or patty.

5️⃣ Fry the Vadas:
Heat oil on medium flame. Fry the vadas until crisp and golden on all sides. Drain on paper towels.

6️⃣ Serve:
Serve hot with green chutney or sweetened curd. Garnish with coriander and lemon wedges.

  • Serve on a banana leaf placed on a wooden plate.
  • Use a terracotta bowl for chutney.
  • Cut one vada open to showcase the colourful stuffing.
