✅ Ingredients
For Outer Sabudana Mixture:
- Sabudana (Sago) – 1 cup
- Boiled Potatoes – 2 medium-sized
- Roasted Peanut Powder – ¼ cup
- Green Chillies – 1 to 2, finely chopped
- Fresh Coriander – 2 tbsp, chopped
- Cumin Seeds – ½ tsp
- Lemon Juice – 1 tbsp
- Salt – to taste

- Crumbled Paneer – 2 tbsp
- Red Chilli Powder – ½ tsp
- Garam Masala – ¼ tsp (If it is not for fasting, add garam masala.)
- Fresh Coriander – 1 tbsp
- Salt – to taste

✅ Method
1️⃣ Soak the Sabudana:
Rinse sabudana well and soak for 4–5 hours or overnight. Drain completely and fluff with a fork.

Mash boiled potatoes in a bowl. Add soaked sabudana, peanut powder, green chillies, cumin, salt, lemon juice, and coriander. Mix into a soft dough.

Take lemon-sized portions of sabudana dough, flatten in your palm, place stuffing inside, and shape into a ball or patty.

Heat oil on medium flame. Fry the vadas until crisp and golden on all sides. Drain on paper towels.
